Easy vegan corn bread | Vegetable News

What you need:

1 cup all-purpose flour
¼ cup cornmeal
⅓ cup of light brown sugar
1 tablespoon of baking powder
½ teaspoon of salt
4 tbsp vegan butter, melted
1 cup of unsweetened vegan milk
3 tablespoons Maple syrup, plus more for serving
Vegan butter, for serving

What you are doing:

  1. Preheat the oven to 400 degrees. Lightly grease an 8-inch square baking pan with cooking spray and set aside.
  2. In a large bowl, mix the flour, cornmeal, brown sugar, baking powder, and salt together.
  3. In a medium bowl, combine melted butter, milk, and maple syrup and stir until just mixed. Pour the milk mixture into the flour mixture and stir until just blended.
  4. Scrape the batter into the baking pan and bake for 20 to 22 minutes, until a knife inserted in the center comes out clean. Let cool in the pan on a wire rack for 5 to 10 minutes before serving with butter and maple syrup.
