New French vegan bakery opened in Beverly Hills

This month, Beverly Hills, California-based Chaumont Bakery and Cafe was launched Chaumont vegan, a plant-based bakery specializing in French pastries. Chaumont Vegan was co-founded by Frederic Laski and Laila Abddaim and offers a traditional selection of Viennese products, including croissants in almond, chocolate and strawberry jams made from European cultivated vegan butter from Miyokos Creamery. Pain au chocolat (a soft and flaky sweet bun with a dark chocolate center), fig biscuits, apricot and vanilla twists and Pain suisse (Croissant dough filled with chocolate chips and vanilla pudding, made with Not Milk from the vegan Chilean brand Not Co.).

In addition to traditional baked goods, Chaumont Vegan also serves hearty baked goods such as jalapeño and cheese rolls with Follow Your Heart mozzarella, vegan croissant-based pizzas, peppers and cheese rolls, as well as breakfast items such as avocado toast, muesli and yogurt bowls.

“There are so many restaurants in Los Angeles that offer vegan alternatives. We found that all of them were great food in terms of savory options, but when it came to the sweet side, it was [mostly] Cookies and brownies, ”Laski told VegNews. “So we thought,” Let’s give that [vegan bakery] one try.'”

Demand for vegan croissants

After the ongoing COVID-19 pandemic forced the couple to shut down the Chaumont Street restaurant – a vegan-friendly lunchtime concept for the city’s office workers – Laski and Abddaim decided to close the room due to a significant increase in visitors to Chaumont Vegan close friends inquiring about vegan options on their original Chaumont Bakery and Cafe concept. “Over the past four years we’ve had many friends in our close circle who have gone vegan and some who have been vegans for many years,” said Laski. “The joke that ran was, ‘Hey, when do you make vegan croissants? ‘And at first we thought,’ Hey, there’s no way we can. ‘ But it almost became kind of a challenge and one day we thought, ‘Let’s try.’ ”

Now that Abddaim, Chaumont’s recipe developer, has perfected the bakery’s vegan croissants, she hopes to expand Chaumont Vegan’s gluten-free range. The couple will continue to create vegan versions of French favorites and offer more hearty take-away options. A second Chaumont Bakery and Cafe location opens this summer in Santa Monica, California. Laski and Abddaim plan to offer a separate vegan menu.

Chaumont Vegan is located at 145 South Beverly Drive and is currently open Friday through Sunday. An opening is planned for six days a week this summer.
