Vegan birthday cake bars | VegNews
These blondie-like treats from the Baked with love The cookbook is covered with colorful sprinkles so that you can enjoy the classic birthday cake in a playful way.
What you need:
¾ cup of coconut sugar
½ cup coconut oil, softened
⅓ cup of unsweetened applesauce
1 tablespoon of vanilla extract
2 teaspoons of baking powder
2 cups all-purpose flour
1 teaspoon of baking powder
¼ teaspoon salt
3 to 6 tablespoons of unsweetened vegan milk, room temperature
½ cup vegan streusel
What you are doing:
- Preheat the oven to 350 degrees. Line a 9 by 6 inch baking pan with parchment paper.
- In a large bowl, use a hand mixer to whip coconut sugar, coconut oil, applesauce, vanilla extract, and baking soda until creamy. Sift the flour, baking powder, and salt into a medium bowl.
- Fold dry ingredients too wet until they combine. If the dough seems too dry and doesn’t stick together easily, gently stir in milk, starting with 3 tablespoons and adding up to 3 tablespoons more as needed, 1 tablespoon at a time. Fold in the sprinkles.
- Pour the dough into the prepared baking pan and smooth it out to the edge. Bake for 30 minutes or until a toothpick inserted in the center comes out clean. Let cool for 15 minutes before cutting and serving. Store in an airtight container at room temperature for up to 5 days or in the refrigerator for up to a week.
