Vegan salted chocolate chip biscuit à la Mode

What you need:
1 cup vegan butter, room temperature
¾ cup of light brown sugar
¾ cup of sugar
3 tablespoons of unsweetened vegan milk
1 tablespoon of vanilla extract
2¼ cups of flour
1 tablespoon of cornstarch
1 teaspoon of baking powder
1 teaspoon salt, divided
1½ cups of vegan chocolate chips or vegan mini chocolate chips
Vegan vanilla ice cream for serving
What you are doing:
- Preheat the oven to 350 degrees. Lightly grease a 10-inch cast iron pan or oven-safe pan with cooking spray.
- In a bowl, stir together the butter, brown sugar and sugar until creamy. Add milk and vanilla and mix until well blended. Add the flour, cornstarch, baking powder and ¾ teaspoon salt. Mix until well mixed, being careful not to mix too much. Fold in the chocolate chips until they are evenly distributed.
- Pour the batter into the prepared pan and press it against the sides of the pan. Sprinkle with the rest of the salt. Bake for 40 to 45 minutes, until the center seems dry and the top is lightly brown.
- Take out of the oven and let cool completely before serving. To serve, cut into slices and put a scoop of vanilla ice cream on each slice.
